Chicken, Spring Onion and Beetroot Hummus Sandwich
Inspired by our picnic at Hartenberg Estate and the wonderful beetroot hummus (it was a bit bland but it had the most beautiful colour!) so I decided to do a sandwich with it. I didn't want to add too many things and with the hummus you don't need to.
• 1 chicken breast
• 4 slices wolegrain bread
• 2 tbsp beetroot hummus (see below)
• 1 spring onion (green only, finely chopped)
• salt and pepper
1. Spread 2 slices bread but beetroot hummus.
2. Top with shredded chicken breast and spring onion. Season with salt and pepper. Top with remaining 2 slices bread.
Beetroot hummus
• 1 chicken breast

• 2 tbsp beetroot hummus (see below)

Beetroot hummus
- 1 can of chickpeas drained
- 4 beetroos, peeled, boiled until soft)
- 2 cloves garlic, chopped
- juice of 1 lemon
- olive oil
- salt and pepper
1. Blend the chickpeas, beetroot and garlic cloves in a blender or stick blender until coarsely grounded adding enough oil to loosen it up, but not more than 1/3 cup, if it is too stiff add some more water.
