COHEN DIET: Tomato, Green Pepper and Mushroom Pizza

I love pizza and really, who doesn't? So you have to love a diet where you can have it up to three times a week! I'm on the Cohen Diet again so there are some restrictions as to my toppings, but in the end this is so good that I tend to have it even when I'm not on a diet - and that is saying something!

  • 1/4 cup Mushrooms, sliced
  • 1/4 cup Green pepper, diced
  • 1/4 cup Tomato, diced
  • 1/2 cup Mozzarella, grated
  • 1 tsp Mayonnaise
  • 1/4 tsp garlic
  • salt & pepper
  • 2 crackerbread
  1. Mix everything together in a bowl.
  2. Top 2 crackerbread and bake in a preheated moderate oven until the cheese is melted and browned slightly. About 10 minutes.
  3. Enjoy immediately!


COHEN DIET: Mozzarella Stuffed Mushrooms

I really love mushrooms, ever since I was a child (don't know why, but it did make for some interesting suppers!) and baked like this they really shine. Woolworth's are selling these beautiful big babies that I just had to buy and stuffing them with cheese was a very obvious choice. These are so good that Hubby and I usually fight over the last one...and he always let's me win.

  • 4 big Mushrooms
  • 1 cup Mozzarella, grated
  • 1 tsp chopped Garlic
  • 1 tsp grated Ginger
  • 1 chopped Chilli
  • Olive oil spray
  • Basil leaves

Layer everything, season with pepper and bake in a preheated oven of 180 degrees Celsius for 20-25 minutes or until the mushrooms are cooked and the cheese melted. Enjoy with a big juicy steak or as the main meal with a salad.


COHEN DIET: Green Vegetable Salad with Chicken or Mozzarella

Don't you love it when your family not only supports your diet but actually help make meals! This beautiful salad  is courtesy of my mom. I was hungry and tired and frustrated with the limited choices on the diet and with fresh eyes she came up with this beautiful twist of a salad with veggies instead of salad leaves. It does so well with mozzarella as with chicken and if you are not on a diet then doe mozzarella slices with the chicken.

I didn't give quantities as you use as much as you need or want, swapping out those veggies you don't like or want for those you have on hand. Enjoy this warm salad.
  • Broccoli
  • Asparagus steamed
  • Mushrooms
  • Chicken or Mozzarella 
  • Green pepper
  • Spring onion
  • Mango
  • Vinegar
  • Salt and pepper
  1. Fry the sliced mushrooms until cooked. If using chicken, fry sliced breast with the mushrooms.
  2. Steam asparagus or fry them with the mushrooms.
  3. If using mozzarella slice into thin strips.
  4. Cut the broccoli into bite size pieces.
  5. Slice the green pepper and mango into thin strips.
  6. Add all the ingredient in a bowl, season with salt and pepper, mix well and enjoy


COHEN DIET: Steak, Coriander Salad Sandwich

A steak sandwich always sounds good but a steak sandwich on a diet sounds even better!!!

The mayo and vinegar makes a tangy sauce. If the tomatoes aren't sweet and juicy, add 1 tsp water or diet sprite and some sweetener.

Serves 1

• 1/4 cup diced cooked steak
• 1/4 cup diced cucumber
• 1/4 cup diced tomato
• 1 tsp mayonnaise
• 1 tbsp white vinegar
• 1 tbsp chopped coriander
• 2 crackerbread

1. Mix everyting togerther and spoon on top of the crackerbread.

2. Enjoy


COHEN DIET: Chicken Mango Salad with Basil Salad Dressing

Can you believe it, I'm actually going strong with a diet? Well, don't believe everything you read. I am following it with one eye closed but I am getting better at it. I just have to make sure I'm not at home whenever I get hungry because then I will eat anything that crosses my path! This salad however is so good that I can have it everyday. I've moved away from coriander a bit and am loving basil at the moment. It's funny how one 'discover' new tastes all the time. Try this one and maybe you'll discover something new that you like as well.
  • 1/2 - 1 cup diced chicken
  • 1/2 cup green pepper sliced
  • 1 cup salad leaves
  • 1/2 cup diced mango
Mix it all together in a bowl and top with dressing.

Basil Mayo Salad dressing

  • 1 tsp mayo
  • 1 tbsp vinegar
  • 1 tsp finely chopped basil
  • 1/2 tsp sweetener 
Whisk everything in a small bowl. Pour over the salad.

If you are not on a diet then an even easier option is using basil pesto instead of the fresh basil and sweetener.

I used smoked chicken instead that is home smoked. If you buy smoked chicken ensure that you buy those without any sugar. 111g raw chicken equals 100g smoked chicken.


Breakfast Yoghurt 'Cheesecake'

Hubby surprised me with this little treat that is so diet friendly, made from what we always have on hand: yoghurt! It was so tasty and because it had a base of sin-free provitas, I also enjoyed it as a tasty breakfast. However add some berries it becomes a low fat dessert!
What do you need? Very little actually!
  • 1 litre fat free Bulgarian yoghurt
  • 1 can condensed milk
  • provitas (about 20)
  1. Crush the provitas (or any other biscuit) into crumbs. Spread evenly on the bottom of a pie dish.
  2. Mix the yoghurt with the condensed milk.
  3. Spread the mixture over the crumbs (trying not to move the crumbs around).
  4. Microwave for 6 minutes oh high.
  5. Let it cool down and refrigerate.
It will last 3 days in the fridge but some water might be released but it does not affect the taste in any way.


COHEN DIET: Chicken, Green Pepper and Mango Curry Sandwich

These sandwiches are great and the filling will work with any bread. I added just a hint of curry but if you feel like it you can double the curry powder. I also add salad leaves to make it a salad sandwich. If you leave out the crisp bread then it becomes a delicious salad. As you might have notice I tend to have chicken for lunch (leaving the steak, which feels more substantial) for dinner. Also if you have a rotisserie chicken then you have enough chicken almost for the whole week. Just don't sneak the chicken skin into your diet like I tend to do!


• 1 chicken breast, shredded
• 1/2 a green pepper diced
• 1/2 a small mango diced
• 1 tsp mayonnaise
• 1 tbsp white vinegar
• 1/2 tsp mild curry powder
• 2 crackerbread

1. Mix all the ingredients together (if you want more mayo feel free to add more but this dish is intended to have a mayo taste without it being slathered in mayo).

2. Top 2 crispbreads

3. Enjoy!


The Mixing Bowl Cake Company's Rainbow cake

 I was "over the rainbow" (excuse the pun) with this cake. I can without say, without worry of reproach, that I have found my "cake lady" from whom I will be getting all my cakes in future. I'm already working on Emma's first birthday party that's in October, that's how excited I am. I am looking for any excuse to have some more of her cakes...Easter maybe or maybe just for Sunday Lunch?

The wonderful lady behind The Mixing Bowl Cake Company is Karen and I have no idea what her secret is, how she gets her cakes so vibrant and moist making them beautiful and delicious at the same time. Amazing. I had people who aren't cake people (yes these creatures without a sweet tooth actually exist, can you believe it?) and they were fighting over an extra slice!

But wait, there's more! If you think her cakes are gorgeous, wait until you see the cupcakes....

These were so good that I had to taste one immediately, which meant I stole a cupcake, while driving home from picking up my order! I have no idea what the other motorist thought as they saw me devouring what looked like a tiny rainbow with magical sprinkles, but since I was in heaven I really didn't care. I was just desperately trying not to break open the box and eat the remaining eleven before getting home!


Bukhara/Haiku Restaurant

I love getting 2-for-1 deals and this restaurant satiates my weird obsession by being a Japanese and Indian restaurant in one! Located on the second floor in the Victoria & Alfred Mall in the Waterfront you get to do some serious shopping before enjoying a good meal.

Bukhara is a typical Indian Restaurant with a wide selection of curry and tandoori meals. SOmething for everyone's tastes. Their Naan bread is crispy and deliscious (just wish they did a cheese and garlic naan). They use the best cuts of meat for their curries so you will never get a dry or tough curry.

Haiku is probably better known for their sushi but I enjoy the Dim Sum. I usually hate sushi restaurant because they tend to smell badly of seafood and it is enough to put me of my food. Here we walked straight past the fish counter and I didn't even notice!

The selection is fantastic and what is really great is you can order something from both menu's at the same time! SO that was exactly what we did:

We had spicy lamb pot stickers and spicy chicken fried wontons as a starter and I had lamb korma and Hubby butter chicken for main. Though I love a good curry and Bukhara's is probably one of the best I have had in a while, the reason why I will return again and again is for the Dim Sum. Utterly delicious!


Smoked Chicken, Avocado and Mango Tortilla Fold-over

How easy can it be? Well if you are me, then probably pretty hard as I am (despite your thoughts to the contrary) quite inept when it comes to cooking. Take these fold overs. They should be easy but no, I have either too much stuffing or too little cheese or too much cheese that bubbles out and burns before the insides are nice and hot or when I try to flip it over everything falls out and so it goes (usually with a burn or two later).

Then I discovered an easy way to cheat the perfect fold over. You finish it in the microwave! Then everything is hot and bubbly! But to get the crunchy tortilla you do need to start on the stove top.

Serves 1
  • 1 tortilla
  • 1/2 a smoked chicken breast, sliced
  • 1/4 cup diced mango
  • 1/4 green pepper, diced
  • 1/4 avocado, diced
  • 5 thick slices mozzarella
  • 1 tsp red pepper pesto
  1. Place the tortilla in a cold non stick pan.
  2. Spread the red pepper pesto on the tortilla.
  3. Layer the sliced mozzarella on top, shredded into pieces by hand.
  4. Layer the chicken, green pepper, avocado and mango on top.
  5. Place the pan on high heat and cook until tortilla is crispy and browned.
  6. Transfer the tortilla onto a plate and heat in the microwave at 30 second intervals until mozzarella is bubbly.
  7. Fold tortilla over, cut in half and enjoy.

It's that time of the year again: diet time! A new year with new beginnings (or so I hope  anyway) and I will try the Cohen Diet again. I lost a lot of weight the last time I tried it so, no better time than the present, let's just hope it lasts longer than a week! This is my favourite lunch to have and so easy to make. 

  • 1/4 cup Mushrooms, sliced
  • 1/4 cup Green pepper, diced
  • 1/4 cup Red onion, diced
  • 1/2 cup Mozzarella, grated
  • 1 tsp Mayonnaise
  • salt & pepper
  • 2 crackerbread

  1. Mix everything together in a bowl.
  2. Top 2 crackerbread and bake in a preheated moderate oven until the cheese is melted and browned slightly.
  3. Enjoy immediately!


Coconut, Peanut butter & Caramel Bars

Doesn't it sound amazing? Well it tastes even better! It was one of those kitchen sink moments, so the amounts may sound odd. I hate packets left half full and I had a big pan to full so I used the whole packet of whatever I had. Peanut butter melts are basically peanut butter flavored white chocolate bits. They are available from baking stores.

  • 65g butter
  • 150g Tennis biscuit crumbs
  • 340g Peanut Butter melts
  • 150g Cream Caramels
  • 100g Fine desiccated coconut
  • 385g Condense milk

  1. Melt the butter in a big bowl.
  2. Add the biscuit crumbs and mix until it resembles wet sand.
  3. Line a tin with wax paper. Add the crumbs and spread evenly.
  4. Spread an even layer of the peanut butter melts.
  5. Cut the caramels into quarters and add an even layer on top of the peanut butter melts.
  6. Top evenly with the desiccated coconut.
  7. Pour the condense milk evenly on top.
  8. Preheat the oven to 180*C. Bake for 25 minutes or until the top is brown.


The Just Married Diet

Now this is a diet I could follow! Why? Because even though it's main objective is to be healthy when most couples just want to snuggle together on the couch and get take-away, it also seems indulgent, you forget it's a diet and see it more as just a meal plan. What's more is that it utilizes leftovers, something I always get stuck with in the fridge and forget about until there's some funny smell emanating from the said fridge. Like the Bikini Diet, this diet is adapted from the same website

Oh and the lunch ideas aren't too bad. I almost feel guilty for not thinking out my own lunch ideas. Almost...
