COHEN DIET: Chicken, Green Pepper and Mango Curry Sandwich



These sandwiches are great and the filling will work with any bread. I added just a hint of curry but if you feel like it you can double the curry powder. I also add salad leaves to make it a salad sandwich. If you leave out the crisp bread then it becomes a delicious salad. As you might have notice I tend to have chicken for lunch (leaving the steak, which feels more substantial) for dinner. Also if you have a rotisserie chicken then you have enough chicken almost for the whole week. Just don't sneak the chicken skin into your diet like I tend to do!





SERVES 1


• 1 chicken breast, shredded
• 1/2 a green pepper diced
• 1/2 a small mango diced
• 1 tsp mayonnaise
• 1 tbsp white vinegar
• 1/2 tsp mild curry powder
• 2 crackerbread

1. Mix all the ingredients together (if you want more mayo feel free to add more but this dish is intended to have a mayo taste without it being slathered in mayo).

2. Top 2 crispbreads

3. Enjoy!
