Chicken & Tzatziki Wrap



Our first recipe was shared by Surentia Dörner from Johannesburg, and it's an amazingly easy Greece inspired wrap. 

If you are making it the night before and are using pita bread, I suggest packing the Tzatziki separately so the bread doesn't go soggy.

1/2 cucumber, seeded and grated
100g low fat plain yoghurt
1/4 teaspoon lemon juice
1 tablespoon chopped mint
4 skinless chicken fillets
Pinch of paprika
4 sheets lavash or flat bread
4 large butter lettuce leaves

Sprinkle grated cucumber with salt. Leave cucumber for 10 min, then drain and mix with the yoghurt, lemon juice and mint. Season.

Flatten chicken with a meat mallet or rolling pin, season and sprinkle with paprika. Grill the chicken for 5 -7 min on each side, or until cooked through.

Lay out lavash/flat bread and place a large butter lettuce leaf on each.
Spread each with one quarter of the tzatziki (yoghurt mix) then top with sliced chicken fillet.
Roll up, folding one end closed.
Wrap in baking paper to serve.
