What is Hungry Hubby having for lunch this Thursday? Well, exactly the same as Wednesday Dinner, that's what.
And what did we have for dinner? Some of my Famous Rice Salad, which Hungry Hubby is absolutely addicted to, and it's even better the next day! Chicken pieces cooked on the "braai" with some sticky tangy barbecue sauce and some herb salad with carrots and beetroot.
I like making a big batch of the rice salad as it makes a brilliant lunch the next day. In winter I heat it in the microwave for about 30 seconds or just until the cheese melts for a gooey rice salad. With the cherries & condensed milk and the mayo, you have this fluffy rice salad that's sweet and tangy, cheesy and crunchy (because of the onion and green pepper) and the viennas give a wonderful dimension to it. It's easy to adapt to your family's likes and dislikes. I make it with low fat mayo & cheese, low fat viennas and less condensed milk and a little bit of sweetener for a lower fat version as well.
This is not the best picture but it really is a colourful salad too, white from the rice, mayo and onion, yellow from the cheese, pink from the viennas, green from the pepper and red from the cherries. Plus the cherries gives everything a slight pink tinge. I hope you enjoy this family secret.
