Family Famous Rice Salad
This salad is a fast family famous recipe, which is enjoyed every summer. I make a BIG bowl of this salad as Hungry Hubby loves to have this the next day as a stand alone lunch. It is a bit mayo-heavy (and as with potato salad, pea salad, banana salad and curry pasta salad, I do realize us South Africans really love our mayonnaise!)
• 4 cups cooked or uncooked rice
• 2 cups mayonnaise (or less if preferred)
• 1/2 cup condensed milk
• 1 green pepper chopped into cubes
• 8 viennas quartered lenght-wize and chopped into cubes
• 1 white onion chopped into cubes
• 1/2 cup maraschino cherries cut into quarters
• 1/2 cup gouda cheese cubes into 0,5 cm cubes
• salt & pepper
1. Cook rice, rinse until cool and allow the rice to come to room temperature.
2. In a bowl add the mayonnaise & condensed milk in a bowl. (You van reduce or add either one of the ingredients according to you and your family's tastes, Hungry Hubby likes it tangy and sweet so I add a lot of condensed milk).
3. Add the onion, green pepper, viennas, cheese and cherries and mix well. Season with salt and pepper.
4. Add rice and mix well. Refrigerate until ready to enjoy. Can be made a day in advance.
