COHEN DIET: Chicken, Mango and Mustard Salad


Chicken and mango salad is such a staple on the Cohen Diet but just because it is a no-brainer. Really how difficult is it to add lettuce, green pepper and red onion to some chicken and mango? However, it can get pretty dull quickly. I have changed it up a bit from my 'nromal' Cohen friendly dressing (mayonnaise and vinegar) with some herbs ( for example Basil) but since I didn't have any access to basil, I tried mustard instead. 



It ended up tasting great with the tang of mustard and mayo and the sweetness of the mango. Another great option for this salad. Next time I might add rocket instead of lettuce...


MUSTARD SAUCE:
1 tablespoon vinegar
1 tsp mayonnaise
½ teaspoon mustard powder

Mix well and serve!
