Halloween Monster Brownies

I have sang the praises of a good box mix so many times before and if you are lucky enough to have access to brand such as Nomu, you really do not need to bake it from scratch. But if you have the time try this amazing recipe or even this low carb brownie recipe!

What you need:

Brownies:
  • 1 chocolate brownie kit
  • eggs and butter (as required by the kit recipe)

Peanut Butter Swirl:
  • 60g unsalted butter
  • 200g icing sugar
  • 250g cream cheese
  • 3 TBSP peanut butter
  • 1 TBSP warm milk

 How to:

  1. Preheat the oven to 170C. Lightly grease a brownie tin (these special tins with metal inserts work great giving each brownie crispy edges).
  2. Prepare the brownie or chocolate cake mixture. Pour into the prepared tin.
  3. Prepare the peanut butter mixture (see the picture above thanks to NOMU). Swirl through the chocolate mixture.
  4. Bake for 20 - 25 minutes.
  5. Cool completely.

To decorate you need:

  • 200g icing sugar
  • few drops milk
  • purple food colouring
  • candy eyes
  • liquorice strips

Mix the icing sugar with enough milk to become slightly spreadable (not to much should almost be like butter!). Add a few drops of food colouring. Decorate with eyes and use the liquorice for the mouth.

You can also make it green and do mini Frankensteins.

Enjoy!
