Homemade Chicken Pie


I love quick dinners, if I am in the kitchen for longer than 30 min I get cranky, so for my own sanity I love shortcuts. This one takes just 15 min of prep time and the oven does the rest!


Ingredients:

  • 1 - 1 1/2 rotisserie chicken, meat removed and diced or shredded.
  • 1 cup frozen veggies, diced or frozen peas.
  • 500g mushrooms
  • 1 packet chicken a la king powder sauce or white onion soup powder
  • 1 cup milk
  • 1 Tbsp chopped garlic
  • 1 sheet puff pastry
  • salt and pepper to taste
  • 1 egg, beaten.
  1.  Prepare a large pie dish. Ensure you have enough chicken to fill at least, if not more, than 3/4 of the pan. Preheat oven to 180*C.
  2. In a frying pan, fry the mushrooms until golden.
  3. Add the sauce powder and enough milk to make a thick sauce (not too runny or the pie will be mushy) 
  4. Add the veg and chicken and cook until heated through.
  5. Pour the chicken mixture into the pie dish.
  6. Cut pastry and place on top to cover the chicken mixture.
  7. Brush with egg and bake for 30 min until the pastry is puffed and golden.
  8. Enjoy!


Tips: you can cut one big circle of pastry to top the pie, just make 2 holes for steam to escape. Alternatively cut in shapes and place in an overlapping pattern. Kids love to use cookie cutters to cut the dough in different shapes as well. I also like the "everything but the bagel" sprinkles on top for some texture.
