Quick Marie Biscuit & Marshmallow Cookies
We don't always have time to mix cookie ingredients, bake and then ice them so here is my cheat cookie recipe. We use to make these when I was still at school and don't even remember where the basic idea come from. But it is so quick you have to try them and they end up being really good.
• 1 packet Marie Biscuits
• 1 packet marshmallows
• 1 slab white chocolate
• sprinkles, nuts, etc for decoration.
1. Melt the white chocolate in the microwave and quickly stir it until it's smooth.
2. Place a biscuit upside down on a plate, top each biscuit with a marshmallow and microwave for 30 second (or depending on your microwave) until the marshmallow starts to puff up to almost double it's size.
3. Quickly remove from the microwave and top with another biscuit with the right side up (so no matter what way you turn it, it has the writhing on the outside). Finish with the rest of the biscuits.
4. In a plate spread out the sprinkles, nuts or whatever you are using. You can use a couple of different ones.
5. Dip each biscuit in the white chocolate so it covers almost half-way and quickly dip into you nuts or sprinkles. Repeat with the rest.
6. Allow to cool completely.
We make them for birthdays and as quick valentines treats every year!
