Sriracha Maple Syrup Chicken Wings



I made these amazing wings for Hubby's 40th birthday and they are not just easy but amazingly delicious. I love crispy wings but don't like deep frying things (I always get burned!). So I found this amazing video on on Youtube where a guy rubbed some baking powder on the wings then baked them in the oven. It's pure magic as the baking powder reacts to the fat in the chicken skin turning it deliciously crispy. Add as much as you like as you really do not taste the baking powder! Give it a try!



What you need:
  • 3 tbsp cajun spice mix
  • 2 tbsp baking powder
  • 2 packs chicken wings (approx 800g or more)
  • 1 cup sriracha
  • 1/2 cup maple syrup


What to do:

  1. Preheat the oven to 200*C.
  2. Pat the chicken wings dry.
  3. Mix the baking powder and the spice mix and rub it into the chicken wings.
  4. Arrange the chicken wings on a baking sheet lined with a cooling off rack.
  5. Bake in the middle of the oven for 30 minutes.
  6. Remove and turn. DOn't worry, they will look white for now from the baking powder.
  7. Bake for another 30 minutes until cooked through and crispy.
  8. In a bowl, mix the sriracha and maple syrup. Add the chicken wings and toss while still hot.
  9. Serve with crudites and ranch dressing.
  10. Enjoy!


For the ranch dip:

  • 1/2 cup buttermilk
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 cloves small garlic finely minced
  • 1/4 teaspoon fresh parsley, chopped finely
  • 1/4 teaspoon fresh dill, chopped finely
  • 1/2 teaspoon fresh chives, chopped finely
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
                1.  Mix all the ingredients in a mixing bowl and allow to stand for a few minutes for the flavours to develop.



                Just a side note: my favourite sriracha is the the sriracha mayo (not for this recipe) which is great on anything and even as a dipping sauce for the sriracha wings!
