Best veggies ever!
This was so good, I couldn't NOT share this with you. The veggies were so good that even Hubby and the Little One enjoyed a massive plate each. We had steak for dinner (which we have at least one night a week) and usually it is the steak that steals the show. The trouble is what to serve with it? Salad? Vegetables? Carbs of some kind? I was just so bored with salads and craved something more substantial.
And really, how easy can it be - you just add all the veggies to a pan and lightly fry it so it is still crisp. The flavourings are fresh ginger, garlic, chilli and lemongrass, all of which you can now buy conveniently in one small container at Woolworth's. I then also added some sweet soy sauce. The real secret though? Using the same pan you used to sear the steak in! We fried the steak in some oil (only spiced with salt and pepper) and while the steak rested I prepared the veggies.
What you need:
- 1 cup brusselsprouts cut into thirds
- 1 small onion, diced
- 500g mushrooms, sliced
- 1 cup zucchini sliced
- 1 red pepper, sliced
- 1/2 cup carrot batons
- 1/2 cup butternut batons
- 1/2 tsp ginger
- 1/2 tsp garlic
- 1/2 tsp chilli
- 1/2 tsp fresh lemongrass
- 1 tbsp Indonesian sweet soy sauce
- oil for frying
How:
- Add some oil to a frying pan (non stick is best).
- Add the onions and mushrooms and fry for a bit.
- Add the brusselsprouts and zucchini slices.
- Add the garlic, chilli, ginger and lemongrass and stir.
- Add the rest of the veggies and the soy sauce and stir until the veggies are cooked but still crisp.
- Serve and enjoy!
