Spinach and Ricotta Pockets with Tomato Sauce


This is so easy. I buy pre-made tortellini and make a fresh sauce. This time I fried some chopped red onion. I added 250g halved mini Rosa tomatoes. Fry until soft and add some sugar, garlic and white balsamic vinegar. Reduce for 5 minutes. Add about 50 to 100ml cream and some pasta water and cook for 10 min. Add the pasta. Serve with parmesan and fresh basil.
