Meatballs in Cream Tomato Sauce
What you need:
For the Meatballs:
- 500g mince
- 3 tbsp fine coconut
- 1 egg
- 1/4 cup full cream milk
- 2 tbsp sugar substitute
- 1 tbsp curry powder
- 1 tsp turmeric powder
- 1 mall onion diced fine.
- Mix all the ingredients together and form into balls.
For the bake:
- Meatballs per above
- 150ml heavy cream
- 50g fresh parsley
- 1 tbsp tomato paste
- salt and pepper
- Mix the cream and tomato paste together. Season with sal and pepper.
- Heat oil in a frying pan. Fry the meatballs until nice and brown. Place in a heatproof bowl. Pour the sauce over the top and bake in a preheated oven of 180C for 20 minutes until the meatballs are cooked through and the sauce becomes nice and thick.
- Top with parsley before serving.
